The Perfect Pesto

Instructions

Ingredients: 

  • 2 cups basil leaves

  • ½ cup pine nuts

  • ½ cup grated parmesan cheese 

  • The juice from 1 lemon

  • ¼ cup extra virgin olive oil 

  • ¼ tsp salt

  • 2 cloves of garlic

  • Serve with zucchini noodles and Chef Hak’s Chicken Meatballs


Instructions: 

  1. Add all ingredients to a food processor and pulse until well combined. You can add more olive oil if you prefer a smoother consistency. 

  2. Preheat a little bit of avocado oil in a skillet over medium heat. 

  3. Cook the Chef Hak’s meatballs for 2-3 minutes on each side, then set aside. 

  4. Add zucchini noodles to the pan and cook for 2 minutes. Top the zucchini noodles with pesto and cook for another minute, mixing so that the noodles are well-coated. 

  5. Top with Chef Hak’s meatballs, fresh basil, and more parmesan cheese.
