Spinach Stuffed Spaghetti Squash

Ingredients: 

  • 1 spaghetti squash 
  • ½ packet of Chef Hak’s Creamed Spinach
  • 1 cup of cooked shredded chicken 
  • ½ cup shredded mozzarella cheese
  • 1 tablespoon avocado oil 
  • ½ tsp salt 
  • Optional: crushed red pepper flakes for serving 

Instructions: 

  1. Preheat the oven to 425 degrees. 
  2. Halve your spaghetti squash lengthwise and remove the seeds. 
  3. Drizzle the inside of the squash with avocado oil and salt. 
  4. Place the cut side of the squash down on a greased baking sheet and bake for 40 minutes. 
  5. Flip the squash over and cool for 5-10 minutes. 
  6. Use a fork to scrape the squash to form the spaghetti-like strands. 
  7. Add the chopped chicken and Chef Hak’s creamed spinach to the spaghetti squash boats, mnixing well. 
  8. Sprinkle shredded mozzarella over the spaghetti squash boats and return to the oven for an additional 15 minutes. 
  9. Top with red pepper flakes and enjoy
