Roasted Veggie Sandwich

Instructions

Ingredients:


1 1⁄2 cups Chef Hak’s Mediterranean Vegetables
1⁄4 cup chipotle mayo
1⁄2 avocado, sliced
1⁄2 cup sprouts
1 tablespoon extra virgin olive oil


Directions:


1. Add 1 tablespoon of oil to the air fryer basket. Toss your frozen vegetables in the oil to coat them
evenly. Then, air fry them at 425°F (220°C) for 8 minutes. Shake the basket halfway through
cooking for even results.
2. Heat a skillet or griddle over medium heat. Drizzle with a little olive oil (optional) and toast the
bread slices until golden brown and slightly crisp.
3. Spread chipotle mayo on one toasted bread slice. Top with the roasted vegetables from the
frozen mix. Add sliced avocado and your chosen sprouts.
4. Serve the sandwich open-faced or gently fold the other toasted bread slice over the top.
