Ingredients:

1 package of Chef Hak’s Roasted Root Veggies

1 bell pepper, diced

½ of a yellow onion, diced

3 cloves of garlic, minced

½ can of black beans, drained and rinsed

½ tsp salt

Avocado oil for cooking

Optional: sliced green onions to garnish
Instructions:

Heat your avocado oil in a pan over medium heat.

Saute the bell peppers and onions for 4-5 minutes, until tender. Then mix in the garlic
-
Add Chef Hak’s Roasted Root Veggies to the pan and saute for a few minutes
-
Mix in the black beans, add the salt, and cook for 3 more minutes.

Garnish with green onions and enjoy
