Mediterranean Meatball Bowls

Instructions
Ingredients:

1 package of Chef Hak’s chicken meatballs

1 can of chickpeas, drained and rinsed
-
1 red bell pepper, sliced into strips
-
1 medium red onion, sliced into strips
-
2 cups of cauliflower florets
-
½ cup of dry rice, cooked according to the package
-
1 tbsp avocado oil
-
1 tsp garlic powder
-
1 tsp oregano powder
-
½ tsp salt
-
Tzatziki to serve
-
Optional: parsley to garnish
Instructions:

Preheat the oven to 400 and lightly grease your baking sheet.

Add the chickpeas and veggies to the baking sheet. Drizzle with avocado oil, then toss with the salt, garlic powder, and oregano. Bake for 15 minutes

Remove the baking sheet from the oven and move the veggie mixture to one side of the pan.

Add Chef Hak’s chicken meatballs to the baking sheet, and bake for 10 more minutes.

Serve the veggies and chicken meatballs in a bowl with the cooked rice.

Top with tzatziki and garnish with fresh parsley.
