Ingredients:
- 1 package of Chef Hak’s Farmers Market veggies
- 1 pound of chicken breast, cubed
- 1 tbsp avocado oil
- 1 cup of fire roasted tomatoes
- 1 can of coconut milk
- 1 Tbsp curry powder
- 1 tsp salt, more to taste
- Optional: rice and parsley for serving.
Instructions:
- Preheat the avocado oil in a medium saucepan and cook the chicken. Once the chicken is cooked thoroughly, set it to the side.
- Saute Chef Hak’s Farmers Market veggies for about 5 minutes, until tender.
- Add the fire roasted tomatoes, coconut milk, curry and salt to the saucepan, mixing well.
- Add the chicken back to the pan, then bring the mixture to a boil.
- Reduce to a simmer and cover. Cook for 10 minutes, stirring often.
- While the curry is cooking, prepare your rice according to the package.
- Serve the curry alongside rice or a grain of your choice! Garnish with minced parsley, and enjoy!
