Farmer’s Market Curry

Instructions

Ingredients: 

  • 1 package of Chef Hak’s Farmers Market veggies 
  • 1 pound of chicken breast, cubed
  • 1 tbsp avocado oil 
  • 1 cup of fire roasted tomatoes 
  • 1 can of coconut milk 
  • 1 Tbsp curry powder 
  • 1 tsp salt, more to taste 
  • Optional: rice and parsley for serving. 

Instructions: 

  • Preheat the avocado oil in a medium saucepan and cook the chicken. Once the chicken is cooked thoroughly, set it to the side. 
  • Saute Chef Hak’s Farmers Market veggies for about 5 minutes, until tender. 
  • Add the fire roasted tomatoes, coconut milk, curry and salt to the saucepan, mixing well. 
  • Add the chicken back to the pan, then bring the mixture to a boil.
  • Reduce to a simmer and cover. Cook for 10 minutes, stirring often. 
  • While the curry is cooking, prepare your rice according to the package. 
  • Serve the curry alongside rice or a grain of your choice! Garnish with minced parsley, and enjoy!
