Ingredients:
- 1 pouch Chef Haks Roasted Root Vegetables
- 4 cups baby kale
- 1 honeycrisp apple, cored and diced
- ½ cup feta cheese crumbles
- ½ pumpkin seeds
- ¼ cup olive oil
- 2 tbs apple cider vinegar
- 1 tsp dijon mustard
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Preheat an airfryer to 400F. Add one pouch of Chef Haks Roasted Root Vegetables to a medium sized baking dish or directly to the air fryer basket and bake for 5-7 minutes.
- In a large serving bowl or plate, add the baby kale followed by the roasted vegetables, apples, feta cheese and pumpkin seeds.
- In a small jar, add the olive oil, apple cider vinegar, dijon mustard, salt and pepper. Shake the jar to combine. Drizzle the dressing on top of the salad.
- Enjoy hot or chilled. Best served immediately or within 24 hours
