Lemon Herb Chicken Orzo Skillet

Instructions

             Ingredients:

 

  • 1 package Chef Hak's Simply Roasted Chicken

  • 8 oz orzo pasta

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 cup cherry tomatoes, halved

  • 2 cups baby spinach

  • 3 cloves garlic, minced

  • 1 small shallot, diced

  • ½ cup chicken broth

  • ½ cup heavy cream (or half-and-half)

  • Juice of ½ lemon

  • ¼ cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning

  • Fresh cracked black pepper


             Instructions:


  • Bring a pot of salted water to a boil. Cook the orzo according to package directions until al dente. Drain and reserve ¼ cup of the pasta water.

  • Slice the Chef Hak's Simply Roasted Chicken Breast into bite-sized strips. Warm according to the package directions.

  • In a large skillet, heat the olive oil and butter over medium heat. Sauté the shallot for 2–3 minutes until softened. Then add the garlic and cook for 30 seconds. Stir in the cherry tomatoes and cook for 3–4 minutes until they begin to soften.

  • Add the chicken broth, cream, lemon juice, garlic powder, and Italian seasoning. Stir in the Parmesan until melted and smooth. Fold in the spinach and cook until just wilted.

  • Add the cooked orzo and warmed chicken to the skillet. Toss until everything is evenly coated. If needed, add a splash of reserved pasta water to loosen the sauce. Ready to be served.
