Crispy Garlic Veggie Quinoa Skillet Cakes

Ingredients:

1 package of Chef Hak’s Garlic Roasted Veggies & Quinoa

1 egg
-
1/3-1/2 cup breadcrumbs

2 tablespoons grated parmesan

1 tablespoon of olive oil
-
1/2 teaspoon garlic powder
-
1/4 teaspoon black pepper
-
Plain yogurt or sour cream
-
Lemon
-
Salt
Instructions:

Add one package of Chef Hak’s Garlic Roasted Veggies & Quinoa pack to a skillet over medium heat. Cook it until hot and most of the extra moisture is gone. Stir often. (This is important because if it is too wet, the cakes will fall apart)

Transfer the cooked mixture to a bowl and let it cool for about 5 minutes, until it is comfortable to handle.

Use kitchen scissors to cut up any larger broccoli pieces. A slightly finer mixture will hold together better.

Stir in 1 egg, breadcrumbs, grated parmesan, garlic powder, and black pepper. Mix until everything is well combined.

Scoop the mixture and shape it into small patties, about 2 to 3 inches wide. Press them firmly so they stay together.

Add olive oil to a nonstick skillet then heat over medium heat. Place the patties in the skillet and cook for about 3 to 4 minutes per side, until golden brown and crispy.

In a small bowl, mix plain yogurt or sour cream with a squeeze of lemon juice and a pinch of salt.

Serve the crispy cakes warm with the lemony sauce on top or on the side.
