Roasted Carrots with Maple Dijon Glaze

Instructions

Ingredients:

  • 1 lb Carrots
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp fresh thyme, chopped
  • Extra Virgin Olive Oil
  • 2 TBSP Whole grain Mustard
  • 2 TSP Maple syrup

Instructions:

  1. Preheat oven to 300 F
  2. Season trimmed Carrots with salt, pepper, thyme, and a touch of EVOO
  3. Roast carrots in oven for 20 minutes
  4. In a small bowl, combine Whole grain mustard with Maple syrup.
  5. Drizzle over carrots and enjoy!
