- 1 lb Carrots
- 1 tsp salt
- 1 tsp pepper
- 1 tsp fresh thyme, chopped
- Extra Virgin Olive Oil
- 2 TBSP Whole grain Mustard
- 2 TSP Maple syrup
- Preheat oven to 300 F
- Season trimmed Carrots with salt, pepper, thyme, and a touch of EVOO
- Roast carrots in oven for 20 minutes
- In a small bowl, combine Whole grain mustard with Maple syrup.
- Drizzle over carrots and enjoy!
