3 Heirloom tomatoes

1 handful of Cherry Tomatoes
- 1 Peach

Fresh Basil

1 cup of Goat Cheese

Bacon
-
1 tbsp Olive Oil

1 tbsp Apple Cider Vinegar

1/2 tbsp Honey
-
1/2 tbsp Dijon Mustard

1 Shallots, minced
-
1 Garlic clove, minced

Fresh Thyme
-
1 tsp Chili Flakes

1 tsp Black Pepper
- Chef Hak's Balsamic Dressing
Instructions
- Wash and slice all your peaches and tomatoes
- In a small bowl, combine olive oil, shallots, chili flakes, black pepper, dijon mustard, honey, and apple cider vinegar together, whisk and set aside
- Ready a skillet and fry your bacon until cooked to desired crisp-ness
- In a large bowl add all your chopped peaches and tomatoes, top with bacon and drizzle your dressing on top
- FInish the dish off with a sprinkle of goat cheese, fresh thyme and a light drizzle of Chef Hak's Balsamic Dressing!
