Ingredients
- Roasted Rainbow Carrots
- 1 cup Greek Yogurt
- Extra Virgin Olive Oil
- Hot Honey
- Fresh Mint
- Fresh Cilantro
- Pistachios, chopped
- Sea Salt
- Pepper
Instructions
- Preheat oven to 400 degrees
- Peel carrots and cut in halves, toss with Olive Oil and salt and pepper
- Lay on oven safe tray and cook for 20 minutes
- Remove carrots from oven and set aside on serving plate to cool for about 5 minutes, cut and dice your pistachios, mint and cilantro while you're waiting.
- Once carrots are done cooling, top with yogurt, hot honey, pistachios, mint, and cilantro, enjoy!
