Roasted carrots with Yogurt, Hot Honey, Pistachios, & Fresh Mint and Cilantro

  • Roasted Rainbow Carrots
  • 1 cup Greek Yogurt
  • Extra Virgin Olive Oil
  • Hot Honey
  • Fresh Mint
  • Fresh Cilantro
  • Pistachios, chopped
  • Sea Salt
  • Pepper

Instructions

  1. Preheat oven to 400 degrees
  2. Peel carrots and cut in halves, toss with Olive Oil and salt and pepper
  3. Lay on oven safe tray and cook for 20 minutes
  4. Remove carrots from oven and set aside on serving plate to cool for about 5 minutes, cut and dice your pistachios, mint and cilantro while you're waiting.
  5. Once carrots are done cooling, top with yogurt, hot honey, pistachios, mint, and cilantro, enjoy!
