Ingredients:
1 1⁄2 cups cooked quinoa (rinsed and cooked according to package instructions)
2 cups cooked spinach (fresh or frozen)
2 1⁄2 cups Chef Hak's Mediterranean Vegetables (cooked following package instructions)
1 cup kimchi, chopped (adjust to your spice preference)
1 avocado, sliced
Soy sauce, for drizzling
Sesame seeds, garnish
Assemble:
1. Cook the quinoa according to package instructions. While the quinoa cooks, rinse and sauté the
spinach in a pan with a little olive oil until wilted.
2. Prepare Chef Hak's Mediterranean Vegetables by following the package instructions.
3. Divide the cooked quinoa and spinach between two bowls. Top with the roasted vegetables from
the Chef Hak's mix.
4. Add chopped kimchi to each bowl, adjusting the amount to your desired level of spice.
5. Drizzle a little soy sauce over each bowl to taste. Start with a light amount and add more if
desired.
