  • 3 Eggs
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • Cream
  • Leeks
  • Ricotta
  • Asparagus
  • Fresh Basil
  • Pesto

Instructions

  1. Whisk eggs and cream together with salt and pepper in bowl and set aside

  2. Dice Leeks and Asparagus

  3. In cast iron skillet saute leeks and asparagus until soft

  4. Pour egg mixture over and cook lifting edges and let runny egg go under until nearly set, about 2 min

  5. Take some dollops of ricotta and pesto and then pop into broiler for 2 min

  6. Top with fresh basil and enjoy!
