Ingredients:
- 10 pasture raised eggs
- 3 cups Chef Hak’s Mediterranean Veggies
- 1 Tbsp avocado oil
- ½ cup of kalamata olives, halved
- 1 tsp salt
Instructions:
- Preheat your oven to 400.
- In a skillet over medium heat, add the avocado oil and Chef Hak’s Mediterranean veggies. Sauté for 7-10 minutes until tender, stirring occasionally.
- Crack the eggs into a medium bowl and whisk together with the salt.
- Coat a pie pan or round baking dish with a little more avocado oil, then add the sauteed veggies to the pie dish,
- Top the veggies with kalamata olives, then the egg mixture.
- Transfer to the oven and bake for 22-25 minutes, until cooked thoroughly.
