Mediterranean Veggie Frittata

Instructions

Ingredients: 

  • 10 pasture raised eggs 
  • 3 cups Chef Hak’s Mediterranean Veggies 
  • 1 Tbsp avocado oil
  • ½ cup of kalamata olives, halved 
  • 1 tsp salt 

Instructions: 

  1. Preheat your oven to 400. 
  2. In a skillet over medium heat, add the avocado oil and Chef Hak’s Mediterranean veggies. Sauté for 7-10 minutes until tender, stirring occasionally. 
  3. Crack the eggs into a medium bowl and whisk together with the salt. 
  4. Coat a pie pan or round baking dish with a little more avocado oil, then add the sauteed veggies to the pie dish,
  5. Top the veggies with kalamata olives, then the egg mixture. 
  6. Transfer to the oven and bake for 22-25 minutes, until cooked thoroughly. 
  7. Enjoy!
