Ingredients:
- 1 box of pasta, cooked and cooled
- 3 cups Chef Hak’s Mediterranean Veggies
- 1 cup of diced black olives
- 4 persian cucumbers, cubed into small pieces
- ⅓ cup of extra virgin olive oil
- 3 Tbsp red wine vinegar
- 1 Tbsp Italian seasoning
- ½ tsp salt, more to taste
- ½ tsp garlic powder
Instructions:
- Bring a pot of water to boil and cook your pasta according to the package. Drain the pasta and allow it to cool for at least 1 hour,
- While the pasta is cooking, roast your Chef Hak’s Mediterranean Veggies in the oven or the air fryer and dice the cucumbers.
- Prepare the dressing by combining the olive oil, red wine vinegar, Italian seasoning, salt, and garlic powder.
- In a large bowl, combine the cooked and cooled pasta, cucumbers, olives, and the dressing. Mix well and chill before serving.
