Ingredients:
- 1 cup of Chef Hak’s Mediterranean Vegetables
- 6 eggs
- 1 tbs avocado oil
- Salt and pepper to taste
Instructions:
- Preheat an oven to 400F.
- Heat an oven safe skillet over medium heat. Add 1 tbs avocado oil, swirling the pan to coat the bottom of the skillet.
- Add Chef Hak’s Mediterranean Vegetables to the skillet and saute until fully thawed, for about 5 minutes
- Whisk together the eggs in a bowl and pour into the skillet over the cooked vegetables.
- Allow the bottom to cook for 1-2 minutes and then transfer the skillet to the oven for 15 minutes or until the egg is fully cooked.
- Serve for breakfast with your favorite toppings!
