Ingredients:
- 1 can of chickpeas, rinsed
- 1 cup of Chef Hak’s Farmers Market veggies
- ¼ cup of tahini
- 2 Tbsp of lemon parmesan vinaigrette
- Salt to taste
- Water as needed
- Chopped parsley to garnish
Instructions:
- In a saucepan, saute Chef Hak’s Farmers Market veggies for about 5 minutes, until fork tender.
- Add the sauteed veggies to a food processor with the remaining ingredients and pulse until the mixture is smooth.
- If the mixture is thicker than you’d like, add 1-2 Tbsp of water at a time to thin the mixture out.
- Add salt to taste, and serve with veggies or crackers of your choice!
