Ingredients:
- 4 cups of Chef Hak’s Mediterranean veggies
- 3 eggs
- 1 cup of milk
- 1/4 cup of olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 cup of shredded mozzarella cheese
- Parsley for serving
Instructions:
- Preheat the oven to 375°
- In a medium sized baking dish add the frozen Mediterranean veggies.
- Roast the veggies for 10 minutes until they have softened a bit.
- In a small bowl combine the eggs, milk, olive oil, garlic powder and salt. Mix well to combine.
- Remove the veggies from the oven and top the veggies with the egg mixture.
- Add the shredded mozzarella cheese to the baking dish, then return to the oven for another 15 to 20 minutes.
- Once the egg bake is cooked thoroughly, remove from the oven and top with shredded Italian parsley before serving.
