Egg Bake

  • 4 cups of Chef Hak’s Mediterranean veggies
  • 3 eggs
  • 1 cup of milk
  • 1/4 cup of olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup of shredded mozzarella cheese
  • Parsley for serving 


  • Preheat the oven to 375°
  • In a medium sized baking dish add the frozen Mediterranean veggies.
  • Roast the veggies for 10 minutes until they have softened a bit.
  • In a small bowl combine the eggs, milk, olive oil, garlic powder and salt. Mix well to combine.
  • Remove the veggies from the oven and top the veggies with the egg mixture. 
  • Add the shredded mozzarella cheese to the baking dish, then return to the oven for another 15 to 20 minutes.
  • Once the egg bake is cooked thoroughly, remove from the oven and top with shredded Italian parsley before serving.
