Ingredients

  • 2 Hot House Cucumbers
  • 5 Sweet Tomatoes
  • 1 tbsp of Extra Virgin Olive Oil
  • 1 cup Sherry Vinegar
  • 1 tsp Sea Salt
  • 1 tsp Fresh Black Pepper

Instructions

  1. Core out the seeds of your hot house cucumbers and add to blender along with all tomatoes. Add your olive oil, sherry vinegar, and salt and pepper
  2. Blend for about 30 seconds
  3. Pour into a bowl or glass, and drizzle olive oil and top with pepper, enjoy!
