- 2 Hot House Cucumbers
- 5 Sweet Tomatoes
- 1 tbsp of Extra Virgin Olive Oil
- 1 cup Sherry Vinegar
- 1 tsp Sea Salt
- 1 tsp Fresh Black Pepper
- Core out the seeds of your hot house cucumbers and add to blender along with all tomatoes. Add your olive oil, sherry vinegar, and salt and pepper
- Blend for about 30 seconds
- Pour into a bowl or glass, and drizzle olive oil and top with pepper, enjoy!
