Creamy Lemon Orzo with Spring Peas

Ingredients

  • Orzo
  • Lemon
  • Peas
  • Bone broth
  • Heavy Whipping Cream
  • Fresh thyme
  • Fresh Basil
  • Garlic
  • Shallots
  • Parmesan Cheese
  • Extra Virgin Olive Oil

Instructions

  1. Pour a small amount of oil in a medium sized pan.

  2. Dice you shallots and add to pan, cook until browned then add garlic, lemon zest, and 1 tsp of thyme. Let simmer for 1 minute

  3. Stir in 3 ¼ cup bone broth, and ¼ cup cream and 1 tsp each of salt and pepper.

  4. Bring to a boil and then add 8 oz. orzo, cook for 10-12 min

  5. Remove from heat and stir in peas and lemon juice. Cook until peas are softened, the plate

  6. Garnish with basil and parmesan cheese!
