Ingredients:
½ package of Chef Hak’s Mediterranean chicken
1 can of chickpeas, drained + rinsed
1/4 of a red onion, diced
1 cup of Kalamata olives, halved
4 English cucumbers, quartered then diced
1 cup of cherry tomatoes, quartered
1/4 cup red wine vinegar
1/4 cup olive oil
4 garlic cloves, minced
2 tsp dried oregano
1 tsp salt, more to taste
instructions:
- Start by preheating your air fryer to 400.
- Grab your Chef Hak’s Mediterranean chicken and evenly distribute it on the air fryer tray, cooking for five minutes.
- While the chicken is cooking, chop your veggies and make the salad dressing
- In a large bowl combine the chickpeas, cucumbers, olives, tomatoes, and onions.
- Once the chicken is done cooking, chop it into bite-sized pieces and add to the veggie bowl.
- In a small bowl combine the oil, vinegar, garlic, and spices. Whisk the ingredients for the dressing well, then pour over the salad mixture.
- Mix well and store in the fridge to enjoy! Best when served chilled.
