Chopped Chicken Salad

½ package of Chef Hak’s Mediterranean chicken 

1 can of chickpeas, drained + rinsed

1/4 of a red onion, diced

1 cup of Kalamata olives, halved

4 English cucumbers, quartered then diced

1 cup of cherry tomatoes, quartered 

1/4 cup red wine vinegar 

1/4 cup olive oil

4 garlic cloves, minced

2 tsp dried oregano

1 tsp salt, more to taste


  1. Start by preheating your air fryer to 400. 
  2. Grab your Chef Hak’s Mediterranean chicken and evenly distribute it on the air fryer tray, cooking for five minutes. 
  3. While the chicken is cooking, chop your veggies and make the salad dressing 
  4. In a large bowl combine the chickpeas, cucumbers, olives, tomatoes, and onions.
  5. Once the chicken is done cooking, chop it into bite-sized pieces and add to the veggie bowl. 
  6.  In a small bowl combine the oil, vinegar, garlic, and spices. Whisk the ingredients for the dressing well, then pour over the salad mixture. 
  7. Mix well and store in the fridge to enjoy! Best when served chilled.
