Chipotle Bourbon BBQ Salmon with Roasted Vegetables

Ingredients:

  • 1/3 Cup Chef Hak’s Chipotle Bourbon BBQ Sauce, plus more for topping
  • 1 lb wild caught salmon filets
  • 1 zucchini, sliced in half and then into half moons
  • 1 yellow squash, sliced in half and then into half moons
  • ½ red onion, sliced in half and then sliced into ¼ in strips
  • Salt and pepper to taste
  • Avocado oil spray

Instructions:

  1. Preheat an oven to 400F. Place salmon filets on a baking sheet and brush Chef Hak’s Chipotle Bourbon BBQ Sauce over the filets. Transfer to the oven and bake for 10-12 minutes until the fish is flaky. 
  2. At the same time, place the sliced squash, zucchini and onion onto a baking sheet, spray with avocado oil and season with salt and pepper. Bake for the same time as the salmon.
  3. Enjoy with more Chef Hak’s Chipotle Bourbon BBQ Sauce if desired.
