Ingredients:
- 1/3 Cup Chef Hak’s Chipotle Bourbon BBQ Sauce, plus more for topping
- 1 lb wild caught salmon filets
- 1 zucchini, sliced in half and then into half moons
- 1 yellow squash, sliced in half and then into half moons
- ½ red onion, sliced in half and then sliced into ¼ in strips
- Salt and pepper to taste
- Avocado oil spray
Instructions:
- Preheat an oven to 400F. Place salmon filets on a baking sheet and brush Chef Hak’s Chipotle Bourbon BBQ Sauce over the filets. Transfer to the oven and bake for 10-12 minutes until the fish is flaky.
- At the same time, place the sliced squash, zucchini and onion onto a baking sheet, spray with avocado oil and season with salt and pepper. Bake for the same time as the salmon.
- Enjoy with more Chef Hak’s Chipotle Bourbon BBQ Sauce if desired.
