Ingredients:
- 1 package of Chef Hak’s chicken meatballs
- 1/2 of a red onion, thinly sliced
- 3 cups of cauliflower florets
- 1 large zucchini, cut in half lengthwise, then into ¼’ sliced
- 1 Tbsp of Avocado oil or avocado oil spray
- 1 Tbsp Italian seasoning
- ½ tsp salt
- Optional: fresh parsley to garnish
Instructions:
- Preheat the oven to 400°
- Chop your veggies and transfer them to a baking sheet
- Toss the veggies with avocado oil, salt, and Italian seasoning.
- Add the meatballs to the sheet pan.
- Roast for 25 minutes, or until the veggies are cooked to your liking. Top with chopped fresh parsley, and enjoy!
