Cauliflower Sheet Pan

Ingredients: 

  • 1 package of Chef Hak’s chicken meatballs
  • 1/2 of a red onion, thinly sliced 
  • 3 cups of cauliflower florets
  • 1 large zucchini, cut in half lengthwise, then into ¼’ sliced
  • 1 Tbsp of Avocado oil or avocado oil spray 
  • 1 Tbsp Italian seasoning 
  • ½  tsp salt 
  • Optional: fresh parsley to garnish

Instructions:

  1. Preheat the oven to 400°
  2. Chop your veggies and transfer them to a baking sheet 
  3. Toss the veggies with avocado oil, salt, and Italian seasoning. 
  4. Add the meatballs to the sheet pan. 
  5. Roast for 25 minutes, or until the veggies are cooked to your liking. Top with chopped fresh parsley, and enjoy!
