Buffalo Chicken Enchiladas

Ingredients

  • Chef Hak's Buffalo Sauce
  • 3 cups shredded rotisserie chicken
  • 7 oz of sour cream or greek yogurt as an alternative
  • 3 cups shredded cheddar cheese
  • Green onions
  • Corn tortillas
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400 degrees
  2. In a large bowl, mix sour cream, shredded chicken, 1 cup shredded cheese, salt, pepper, cumin, and garlic powder until combined
  3. Add 2 cups of Chef Hak's Buffalo Sauce and mix again until combined
  4. Warm tortillas, either in the microwave or stove top
  5. Once warmed, take a spoonful of your chicken mixture in the middle of the tortilla and then roll up, add to baking dish
  6.  Repeat this process until baking dish is full
  7. Add remaining 2 cups of shredded cheese on top and bake for 15 minutes
  8. Remove from oven and pour 1/2 cup of Chef Hak's Buffalo Sauce on top and bake for 1 more minute
  9. Add a dollop of sour cream on top and sprinkle sliced green onions on top
