Ingredients:

1 shallot, minced

1 teaspoon olive oil

½ pouch Chef Hak’s roasted brussels sprouts

4 eggs
Instructions:

Heat olive oil in a skillet over medium heat. Add the shallots to the pan and saute for 2-3 minutes, until softened.

Add Chef Hak’s roasted brussels sprouts to the pan, cooking for 5 minutes, until warm.

Create four wells in the brussels sprouts and add a little more oil to each. Add one egg to each. Cover the skillet with a lid, and allow the mixture to cook for another 4-5 minutes, or until the eggs are cooked to your liking.
