Baked Feta Chickpea Dip

Instructions

Ingredients

  • 1 handful of Kale
  • 1 can of Chickpeas
  • Feta
  • 1 Shallot chopped
  • 1 Lemon
  • Pita
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp of Extra Virgin Olive Oil
  • 1 tsp Red Pepper Flakes

Instructions

  1. Preheat your oven to 350 degrees
  2. In a small cast iron or oven safe skillet, drizzle olive oil all over the skillet and add the kale and shallots and stir. Let sit for three minutes
  3. Add the chickpeas to the skillet along with the salt and pepper, stir and let cook for 7 minutes
  4. While you're waiting, cut your feta into medium sized pieces
  5. Slice your lemon into wedges, and squeeze into the skillet, then add your feta
  6. Take your skillet and place into the oven for 10 minutes, or until the feta has become melty in texture
  7. Remove from oven and use pita slices to scoop the dip and enjoy!
