Hak's Organic Chimichurri Chicken Meal Kit

Ingredients:

  • Organic, Boneless Chicken
  • Organic Broccolini
  • Organic Cherry Tomatoes
  • Organic Baby Golden Potatoes
  • Hak's Organic Olive Oil & Lemon Dressing
  • Organic Chimichurri Sauce
  • Ogranic Garlic Oil

Directions:

Refer to the instructions or just watch the short video below and Chef Sharone Hakman will walk you through preparing this meal!

STEP 1: Preheat oven to 450 degrees. Thoroughly wash all of the vegtables. Place potatoes in foil. Gently coat potatoes in 2 tbsp cooking oil, 2 pinches of salt, and 1 pinch of pepper. Wrap the potatoes securely in the foil, place on a roasting pan, and roast for 20 minutes. Remove potatoes from the oven.

STEP 2: While the potatoes are roasting, heat 1 tbsp cooking oil in a large skillet over medium heat. No need to season the chicken thighs as we have pre-seasoned them for you. Once the skillet is hot, add the chicken thighs laying them flat side down (you should hear a sizzle, if not, your pan isn't hot enough) and sear until nicely browned, about 6 minutes. Simmer for 3-4 minutes, until the chicken has reached an internal temperature of 165 degrees. Remove the chicken from the skillet and set aside. Lastly, pour the chimichurri sauce (the large pouch with the green herbs) over the chicken.

STEP 3: Remove potatoes from the oven and open carefully (potatoes will be hot). Use the bottom side of a cup to lightly smash the potatoes to about half an inch in thickness. Drizzle the garlic oil (the large pouch containing minced garlic and oil) over the smashed potatoes, season with a pinch of salt and pepper, and place back in the oven for another 10 minutes at 400 degrees. Once done, remove from the oven and plate.

STEP 4: Using the same skillet (you're welcome), raise heat to medium. After the existing liquid begins to bubble, add the broccolini and cook for 3 minutes, occasionally tossing. Next, add the cherry tomatoes, and continue to toss every 30 seconds so as to avoid burning your veggies. Finally, add our olive oil and lemon vinaigrette (the small pouch); this will deglaze the pan and transfer all of the yumminess from the chicken onto your veggies. Remove the broccolini and tomatoes from the heat and transfer to serving dish.

PLATING: Feel free to serve family style or plate individually. Enjoy!

  • This is a really good meal kit! It’s easy to make, tastes delicious & fresh, has good nutritional facts, and it’s a good price! (about $7.50 a meal). I recently purchased this meal kit at Costco in Van Nuys after a in depth discussion with the positive/driven young lady who was demoing the product (Hak’s assistant). I was really impressed with her involvement/investment in the brand and the Chef’s vision. I hope this company creates more kits.
